Program Basics

Do I need cooking experience before starting?
Not at all. About half our participants come in having barely used a knife properly. We start with fundamental techniques before moving anywhere complex. Last autumn, someone joined who'd lived on takeout for years and still managed fine.
What kind of kitchen equipment matters?
A decent knife, cutting board, and basic pots cover most needs. Fancy gadgets help but aren't required. One participant completed everything using just a tiny Athens apartment kitchen with two burners.
How does the learning format work?
Mix of video demonstrations, written guides, and practice sessions. You work at your pace through modules, with weekly group sessions where we cook together and troubleshoot. Some people finish modules quickly, others take longer. Both approaches work.
Can I adapt recipes for dietary restrictions?
Everything's already vegetarian or vegan, and we show substitutions for common allergens. Gluten-free modifications come up regularly, and we've had participants manage nut allergies without issues.

When do programs typically start?

Next intake opens September 2025, with another in January 2026. Registration usually closes two weeks before start dates, though spaces sometimes fill earlier. We keep groups intentionally small so everyone gets attention.

How many hours weekly does this need?

Plan for maybe six hours spread across the week. Two hours for the live session, rest for practice and watching demonstrations. Some weeks need more if you're trying complex techniques. Some need less when you're just reinforcing basics.

What happens if I miss live sessions?

Everything gets recorded. You lose the real-time interaction, which honestly matters for immediate feedback, but you can catch up. Most people miss one or two sessions during the program without falling behind.

How long until I see actual improvement?

Depends what you mean by improvement. Basic knife skills and flavor building usually click within three weeks. Creating your own recipes without guidance takes closer to two months. The timeline varies based on how much you practice between sessions.

Will I be able to create my own recipes?

By the end, yes. We teach the principles behind recipes rather than just following instructions. Understanding flavor combinations and cooking methods lets you improvise confidently.

What if plant-based cooking feels limiting?

It's actually the opposite problem. The ingredient variety can feel overwhelming at first. You'll learn to work with dozens of vegetables, legumes, grains, and seasonings most people never explore.

Can I cook for non-vegetarian family members?

Many participants do exactly this. The techniques work for any cooking style, and most recipes are substantial enough that meat-eaters don't feel like something's missing.

Is there continued access after finishing?

All materials stay available. The private community continues indefinitely, and alumni often return to ask questions or share discoveries months later.
